She has dedicated her life to empowering people with restricted diets and disabilities—especially children—helping families navigate complex health conditions with clarity, confidence, and practical solutions.

I think it actually started long before that… when I was born.
I always say I was born a skeptic. And people think I'm joking—but I'm not.
I grew up in a very abusive household. And I think when you grow up in that kind of environment, you either shut down… or you become the kind of person who says, “No. This is not how my story ends.”
I’ve always had what I call polite spite.
Don’t tell me what I can’t do—because I’m going to do it anyway.
Kathlena, The Allergy Chef (guest):
I had four kids—not biologically mine—who came from an abusive situation.
In the first year alone, we had over 400 doctor’s appointments.
And then I made a decision.
I took radical responsibility.
I gave myself what I call an independent PhD from the school of the internet.
I learned everything—food, medicine, agriculture, systems—and applied it.
Because I realized something:
You cannot blindly trust the system.
Kathlena, The Allergy Chef (guest):
My youngest son came to me and said, “My heart hurts.”
And when I put my hand on his chest… his heart was literally punching against it.
That moment changed everything.
Because I realized—this isn’t something I can outsource.
This is something I have to understand.
Kathlena, The Allergy Chef (guest):
After removing sugar from his diet for two weeks… he became a completely different child.
Then he had sugar again.
And within minutes, he was throwing himself against the wall.
That’s when I knew.
Food wasn’t just food.
It was information. It was chemistry. It was power.
Kathlena, The Allergy Chef (guest):
You are the expert in your own body.
No doctor lives in your body 24/7.
So why would you give your power away to them?
Think of them as consultants.
You ask the questions. You decide what aligns.

The first step is education.
Understand your diagnosis.
Then test—don’t guess.
Track your food, sleep, water—everything.
Patterns will emerge.
And from there—you take your power back.
Kathlena, The Allergy Chef (guest):
The younger you are when a problem starts… and the longer it goes undiagnosed…
The more likely it is to become permanent.
That’s why this matters.

You are the greatest advocate for your body.
Always.

The best doctors are the ones who say:
“I don’t know… but let’s figure it out together.”
Curiosity is everything.

If you want to take your power back—be curious.
Because once you start asking questions…
You start getting answers.

I became a chef because my child was being bullied for his food.
And I said, “I’m going to show them.”
That’s how the bakery started.

I don’t see limitations.
I only see possibilities.
You can have anything—if you’re willing to do the work.

These foods are engineered.
Designed to hook you.
It’s not your fault.
But it is your responsibility.

No one changes…
Unless it hurts enough.

You have to decide:
What kind of future do I want for my children?
Because your choices today… shape generations.
